“Koshihikari” is arguably the most premium Japonica cultivar of short grain rice available and the most used in the making of sushi
It has a texture described as soft, chewy and sticky and is slightly sweet in flavour. It's grains are short and plump with a high starch content which allows them to stick together without dissolving into a sticky mess.
It is revered by Japanese chefs and is one of the most eaten rice types in Japan. Often described as the 'single malt Scotch' of short grain rice, it's flavour pairs perfectly with the many Asian ingredients without disturbing the nuances of the food when combined together.
Yum Asia selected the very best short grain japonica cultivar. It was selected for it's unique flavor that is slightly sweeter than other Japanese rice varieties, with a good level of stickiness that makes it suitable for all Japanese cooking needs.
Koshihikari rice dominates the market with 30% of the total rice production in Japan and for very good reasons. It's short plump grains retains moisture longer to assist in perfect sushi shaping. The texture and the taste of the rice makes the difference - soft, moist, springy and slightly sweet - for the best eating experience.
Grown in Vietnam (the world's third-largest rice exporter, after India and Thailand) the rice plantation we use grows carefully chosen Japanese seedlings and carefully nurtures them to maturity using pure waters and ecofriendly farming which enables ti to be premium AAA graded.
Our Koshihikari is grown in the best paddy fields of Vietnam and then milled there to ISO 9001-2015 standards. It is FDA, HACCP and Vietnam agri certified. It is non-GMO and halal certified. It's non dairy, gluten free, egg free, nut free, vegan friendly (Regulation (EC) No 1169/2011) and halal approved. Our cultivar of short grain rice grown is the very best you can get. Imported from Japan and chosen for it's pedigree.

Used in a variety of dishes it's use is primarily for sushi (there is no such thing as sushi rice because sushi is actually a type of short grain rice) but can actually be used for many classic Japanese dishes and more.
It's ideal for onigiri, musubi, sushi, temaki, or just your regular rice bowls. Pair it with a Japanese curry or roll it for a delicious sushi roll.

Measure how much rice you want to use
1 cup of rice = 180ml
Rinse the rice in a sieve or similar by running through water until it turns clear. Soak for up to 30 minutes if required.
